What to do after lower division courses are done?
I'm an econ major, and the only required lower division courses are ECON 103, ECON 105, MATH 157, BUEC 232, and two 200 level ECONs.
Those come to 21 credits, and they take care of most of the Breadth's. So after 2 W courses and 2 Q-Science courses, that brings the credits to about ~27-30.
Thats all fine, but the problem is you can't move on to upper division ECON courses til you finish 60 credits, does that mean i spend 30 odd so credits on electives... That just feels like a tonne of electives to me.

I would double check to make sure you have all your Breadths accounted for 100% before you start taking completely random courses.
After you've done that, then move onto pre-reqs for stuff you'll be interested in.
After that, take random easy GPA boosters for whatever remaining LD credits you may need.
The easy thing about economics is the pre-reqs are the same for almost all upper division courses: ECON 103, ECON 105, 60 units of credit.
I still got a little bit of Breadth to finish, but after that i should still have a tonne credits to use on random courses. Too much credits....
If you don't want to do just random courses, then don't. One option is to pick a minor and complete it all as a block within a couple of semesters; it can be something that complements/enhances your abilities and job opportunities in Econ, such as Stats or Math, or you can do something completely unrelated that just interests you.
For example, in my case, I'm transferring to SFU will all of the lower division, and almost all of the WQB taken care of (39 credits). My program requires 132 credits, and most of the classes need to be completed after the 60 credit mark. So, I'm going to do a minor in International Relations (emphasis on Int'l Development) which can be completed mostly in the meantime.
