Frozen reheatable meals are gross. I would think as a phd guy you would be wary of all the shit they pack into those.
I never brine chicken though. Huge waste of time if you want some chicken breast. One of my favourite quick meals is a blackened chicken sandwich. Chop up some green/red peppers, onions, mushrooms, and chicken breast (covered in seasoning/paprika and sauté. Butter 2 slices of sourdough and cover the buttered side with shredded parmesan. Put the parm side on a pan to brown it. Throw in the vegetable/chicken mix and add a slice of cheddar or jack cheese. If I wasn't lazy as fuck I would make this all the time. Instead I just eat bread with meat and cheese in it. :(

Nah, you don't always. It depends on what you're going to do with it..and brining does change the taste.
You can get moist chicken breasts without brining as long as you keep an eye on the temperature and cooking time.
Ravioli, spaghetti, and what not are super easy to cook.
Boil water to a boil, dump them in and wait until they float. Add about 1 teaspoon of salt to it while it's boiling. Drain out the water, mix it with your favorite tomato sauce (I like the 4-cheese flavored ones), sprinkle some shredded Parmesan cheese on top, and some cilantro leaves.
Total cost? $20 bucks to last you about 2 weeks.
Have some left-over meat? Add it with broth, some lentils, cut potato and some onions, carrots and anything else that you want. Done, and done, you now have yourself a brew.
Super cheap. Lentils, potato are really cheap.
Stir fry is also good. Fresh veg of your choice, egg fried rice (crack the egg yourself and mix it in), seasoned with soy sauce and cajun seasoning. Delicious, nutritious, and filling. Rice are a bit tricky to cook right. I use maybe half a cup of rice, mixed with 1 cup of water. Heat it until the rice looks puffy. My rice still taste like shit but I don't care. It's my rice damn it!
Fish is good as well. Slap a piece of fish on some aluminum foil. Add some olive oil to it, some cheese mixed with lemon juice, and whatever seasoning you may want. Bake at high at about 400 F for around 20-30 minutes or so. It helps concentrate the flavors. I hate fish, so I have only tried this once. It turned out ok.
Chicken can be roasted with the same technique as fish. Have it marinated and whatever and eat it with some brown rice. If not, you can grill it with a frying pan, add some olive oil and some salt. You can't go wrong with that.
Sweet potato curry is my favourite. Get some curry paste or cubes (the ones I get are from cilo? I think) Use about 100ml of milk and 200ml of veg stock. Stir it to a boil and you now have some awesome curry sauce. Throw in some chicken breast, carrots, cashews, and onion. Mix it with rice and it feels like eating God's tear.
I have been living alone for the past year and I live off of these things and have learned to cook somewhat well. Experiment a lot and see what works for you. If you don't know how to cook something, throw it on some frying pan, mix it with olive oil and it'll probably turn out ok.
Avoid microwavable food. Those things are utter shit and cost too much. Also, onion is the holy grail of food. Use it everywhere.
Also, any food that you cook for yourself will taste 100000000000000000000000000000000000000x times better than it really is. Remember to take a few seconds before feasting to gawk and be amazed at your work of art. Don't be afraid to mix in your tears of happiness with your food.

Ingredients:
Plantains (Not bananas!) -1 piece is probably good enough for 1 serving... for a chick! But these are so good you might as well buy at least 2! -You can find these in some Indian, Asian supermarkets for like cents a piece.
Cooking Oil - For deep frying
Flour (optional)
Sugar (optional)
Instructions:
[LIST=1] [*]Peel skin off of the plantain - Run a knife lengthwise, split the skin off without breaking the plantain.
[*]Slice plantain into 1/2ish inch slices.
[*]Get a deep fry going on medium high.
[*]Throw plaintain slices into fry. Take them out as soon as they're golden brown. No need to cook them fully yet! - Allow them to dry for 5-10 minutes. Or place them on a paper towel to saok up the oil.
[*]On any clean flat surface sprinkled with flour (flour is optional), squash each slices of plaintain flat. - You may use a flat bottomed glass to flatten them up. - You should have something like this:
[*]Throw flattened plantains back to your medium high fry. - I fry them until there's dark edges around the slices. The dark edges tend to be crunchy and tasty.
[*]Pop em outta the fry, soak on towel and eat them like a boss!
